Indonesian Beef Rendang

Ingredients:

  • 3 lbs of beef chuck.
  • 3 lemon grasses (cut out the root and upper leaf part).
  • 1 red bell pepper (cut onto chunks).
  • 1 thumb of ginger (peel & bash).
  • 10 shallots.
  • 10 candle nuts.
  • 4 Kafir lime leaves.
  • 1 bay leaves.
  • 1 thumb of Kaemferia galanga.
  • 1 thumb of fresh turmeric.
  • 1 tsp of Coriander seeds powder.
  • 1/2 tsp of cumin powder.
  • 2 tbs of grated coconut/palm sugar.
  • Salt and pepper following preferences.
  • 1 tsp of tamarind juice.

Steps:

  • Cut beef onto big chunks around 2 inches each side.
  • Blend all spices except Kafir lime and bay leaves.
  • Add 1/2 cup of oil + 1/2 cup water.
  • Heat pan low medium.
  • Stir fry sauce for 20 min.
  • Add squeezed Kafir lime leaves.
  • Add bayleaves.
  • Put in meat and mix well.
  • Pour in 13 oz coconut milk + 13 oz of water. Mix well.
  • Put in palm sugar, salt and pepper, tamarind juice. Mix well.
  • Cook for 2-2,5 hours, or until meat tender.
  • After 2 hours, pour 5 tbs of Indonesian sweet soy sauce. Mix well.
  • Careful and regularly stir the meat until sauce reduced.
  • Serve the Rendang.

Bahan:

  • 1-1,3 kg daging sapi bagian has dalam/bahu/tanjung/paha belakang
  • 3 serai/sereh (buang bagian daun dan akarnya).
  • 1 paprika merah/8-10 cabe merah besar (potong kotak-kotak).
  • 1 jempol jahe (kupas dan geprek).
  • 20 bawang merah.
  • 10 biji kemiri.
  • 4 daun jeruk purut.
  • 1 daun salam.
  • 1 jempol kencur.
  • 1 jempol kunyit.
  • 1 tsp bubuk ketumbar.
  • 1/2 tsp bubuk jintan.
  • 2 tbs gula merah/aren parut.
  • Garam dan merica sesuai selera.
  • 1 tsp air asam jawa.

Langkah:

  • Potong daging menjadi kotak-kotak besar seukuran 5 cm tiap sisinya.
  • Haluskan semua bahan rempah kecuali daun jeruk dan daun salam.
  • Masukkan 100 ml minyak + 100 ml air putih.
  • Panaskan wajan dengan api kecil sedang.
  • Tumis selama 20 menit.
  • Masukkan daun jeruk purut yang sudah diremas-remas.
  • Masukkan daun salam.
  • Masukkan daging dan aduk rata.
  • Masukkan 800 ml santan segar. Aduk rata.
  • Masukkan gula merah, garam dan merica, air asam jawa. Aduk rata.
  • Masak selama 2 – 2,5 jam, hingga daging empuk dan bumbu meresap.
  • Setelah 2 jam, tuangi dengan 5 tbs kecap manis. Aduk rata.
  • Aduk daging secara terus menerus hingga bumbu berkurang dan mengental.
  • Sajikan panas-panas.
