Fried Tofu and Egg with Peanut Sauce “Tahu Telur”

“Tahu Telur”is Indonesian snack made of fried mix of tofu and eggs, rich in taste because of its peanut sauce. Very special sauce indeed. It has both savory and sweet taste. You can serve this snack dish even for meal. it is very popular since it has special ingredients: cooked shrimp paste. The shrimp paste is different from regular shrimp paste you found in Asian store. The cooked shrimp paste has thicker and more rubber like consistency, it is darker in color too. Ingredients:

  • 2 blocks of 14 oz medium firm tofu.
  • 1/2 cups of Mung beans.
  • 2-3 yellow potatoes.
  • 1 cup of raw peanuts.
  • 1 cup of raw shrimp chips.
  • 1 green onion (chopped).
  • 2 garlics (chopped).
  • 3 eggs.
  • Salt following preferences.
  • 3 tbs of oil.
  • 5 tbs of oil.
  • lot of oil to fry the tofu egg mix
  • 3 tbs of palm sugar.
  • 2 garlics.
  • 1 heaping tbs of cooked shrimp paste.
  • 1/2 – 3/4 cups of warm water.
  • 2 tbs of Indonesian sweet soy sauce.
  • Some parsley

Step:

  • Soak Mung beans in water for overnight. After soaked, drain the water and peel the beans.
  • Peel the potatoes and wash them.
  • Slice potato onto 1/2 inches thick.
  • Deep fry peanuts in oil on medium heat.
  • Drain the oil after peanuts are golden brown.
  • Deep fry chips on low medium heat and then drip the excessive oil using sieve or colander.
  • Slice and cut tofu onto square with 1/2 inch thick.
  • Cut the other piece of tofu onto small chunks.
  • Beat the eggs. Put in garlics and green onions.
  • Put in tofu, salt and mix well.
  • Heat pan on medium, pour in 3 tbs of oil.
  • Fry tofu for 3 minutes on each side. Then set aside.
  • Heat pan on medium, pour 5 tbs of oil.
  • Fry potatoes for 5 minutes on each side or until bit soft. Then set aside.
  • Blend peanuts, 2 garlics, palm sugar, cooked shrimp paste and water until smooth and thick. Pour in sweet soy sauce. The sauce is ready.
  • Heat pan on medium and pour in lot of oil, wait until oil is hot. Pour in egg and tofu mix. Fry until golden brown then flip the tofu egg, fry again until golden brown.
  • Drain the excessive oil and set aside.
  • Serve the tofu egg topped with cut fried tofu, potatoes and pour on sauce. Top again with Mung beans, parsley and shrimp chips. Drizzle with some sweet soy sauce.

Bahan:

  • 2 buah tahu ukuran 400 gr.
  • 100 gr kacang hijau.
  • 2-3 buah kentang.
  • 150 gr kacang tanah mentah.
  • 1 cangkir krupuk udang mentah.
  • 1 daun bawang (cincang).
  • 2 bawang putih (cincang).
  • 3 telur.
  • Garam sesuai selera.
  • 3 sendok makan minyak.
  • 5 sendok makan minyak.
  • banyak minyak untuk menggoreng tahu telur
  • 3 sendok makan gula aren/gula kelapa/gula jawa.
  • 2 bawang putih.
  • 1 sendok makan penuh petis udang.
  • 110-170 ml air hangat.
  • 2 sendok makan kecap manis.
  • Seledri secukupnya

Langkah:

  • Rendam kacang hijau selama semalaman. Setelah direndam, buang air dan kupas kulit kacang hijau.
  • Kupas kentang dan cuci bersih.
  • Iris kentang setebal 1 cm masing-masingnya.
  • Goreng kacang tanah dalam minyak dengan api sedang.
  • Tiriskan minyak setelah kacang berwarna coklat keemasan.
  • Goreng krupuk dalam minyak dengan api kecil sedang hingga matang lalu tiriskan.
  • Iris dan potong tahu menjadi kotak setebal 1 cm.
  • Potong tahu berikutnya menjadi kotak kecil-kecil.
  • Kocok lepas telur. Masukkan bawang putih dan daun bawang.
  • Masukkan tahu dan garam lalu aduk rata.
  • Panaskan wajan dengan api sedang lalu tuang 3 sendok minyak.
  • Goreng tahu selama 3 menit masing-masing sisinya. Lalu tiriskan.
  • Panaskan wajan dengan api sedang lalu tuang 5 sendok minyak.
  • Goreng kentang selama 5 menit masing-masing sisinya atau hingga empuk. Lalu tiriskan.
  • Haluskan hingga kacang, gula aren, 2 bawang putih, petis udang, kecap manis, air hangat benar-benar lumat dan bumbu mengental.
  • Panaskan wajan dengan api sedang, tuang banyak minyak untuk menggoreng tahu telur. Tuang campuran tahu dan telur lalu goreng hingga matang satu sisi, balik perlahan dan goreng lagi sisi berikutnya hingga matang. Tiriskan.
  • Sajikan tahu telur panas-panas dengan potongan tahu goreng, kentang goreng, siraman saus kacang petis, taburi dengan taoge, kacang goreng, seledri and sedikit kecap manis.
