Super Fluffy and Soft Ogura Cake

Ogura cake is moist, fluffy, airy and slightly different with other another popular Japanese cake, Japanese Cheesecake. Ingredients:

  • 5 egg yolks
  • 5 egg whites
  • 1 whole egg
  • 8 tablespoon of sugar
  • 70 ml milk
  • 65 ml vegetable oil
  • 1 teaspoon vanilla extract
  • 11 tablespoon cake flour
  • 1-2 liter boiling water

Steps:

  • Strain eggs on a big hole stainer to drip out the watery liquid from it
  • Beat egg white on high speed using mixer until foamy. Put in 5 tablespoon of sugar and beat again on high speed until soft peak
  • Beat the yolks and 1 whole egg on high speed. Put in 3 tablespoon of sugar and beat until pale and foamy
  • Pour in 70 ml milk, 65 ml vegetable oil and 1 teaspoon vanilla extract. Beat again on high speed for couple minutes
  • Sift in 11 tablespoon of cake flour to the egg yolk mixture. Beat on medium speed. Don’t mix for long time, just until flour mixed well. Scrape flour from the bowl once in a while.
  • Mix the egg white in the yolk mixture gradually
  • Meanwhile, turn on oven to 310 F
  • Use folding method to avoid flatten batter, fold batter until mixed well
  • Lay baking pan (you can use brownie pan, medium pie pan, or loaf pan) with baking paper, surrounding the wall of the pan too
  • Strain the batter before pouring into the pan. Pour in the batter to pan
  • Tap the pan for couple times to get rid of bubbles. Pop bubbles on the surface of the cake using toothpick
  • Pour in 1-2 liters of boiling water to bigger pan. Place the batter pan in bigger pan with boiling water carefully
  • Bake for 30-35 minutes
  • After 30-35 minutes, turn down the oven to 275F. Bake again for 35-40 minutes
  • After 35-40 minutes, turn off the oven and let the door ajar for 10 minutes to avoid cake to shrink after baking
  • Allow the cake to cool completely before serving

RESEP OGURA CAKE YANG LEMBUT, EMPUK, RINGAN

Bahan :

  • 5 kuning telur
  • 5 putih telur
  • 1 telur utuh
  • 90 gram gula pasir
  • 70 ml susu
  • 65 ml minyak sayur
  • 1 sendok teh ekstrak vanilla
  • 90 gr tepung terigu protein rendah
  • 1-2 liter air mendidih

Langkah:

  • Saring telur dengan menggunakan saringan berlubang besar untuk memisahkan telur dengan cairan seperti air dalam telur
  • Kocok putih telur dengan mixer kecepatan tinggi hingga berbusa, masukkan 60 gram gula pasir lalu kocok lagi dengan mixer kecepatan tinggi hingga berujung runcing melengkung.
  • Kocok kuning telur dan 1 telur utuh dengan kecepatan tinggi, masukkan 40 gram gula pasir lalu kocok hingga pucat dan mengembang
  • Masukkan 70 ml susu lalu masukkan 65 ml minyak sayur dan 1 sendok teh ekstrak vanilla. Kocok lagi dengan kecepatan tinggi selama beberapa menit
  • Saring 90 gr tepung terigu protein rendah atau tepung untuk membuat cake kedalam kocokan kuning telur. Kocok dengan kecepatan sedang. Jangan mengocok terlalu lama, hanya hingga tepung tercampur rata saja. Bersihkan tepung dari dinding mangkuk sekali-sekala
  • Masukkan putih telur kedalam adonan kuning telur secara bertahap dan aduk rata
  • Sementara, panaskan oven dengan api panas bawah hingga 160 C
  • Gunakan metode aduk lipat untuk menghindari adonan mengempis
  • Alasi loyang dengan kertas baking. Lapisi juga dinding loyang
  • Saring adonan terlebih dahulu sebelum menuangnya kedalam loyang
  • Tuang adonan kedalam loyang
  • Ketuk-ketukkan beberapa kali untuk menghilangkan gelembung dalam adonan
  • Tusuk gelembung udara yang ada pada permukaan dengan tusuk gigi
  • Tuang 1-2 liter air mendidih kedalam loyang yang lebih besar
  • Letakkan loyang adonan ke dalam loyang yang lebih besar berisi air mendidih dengan hati-hati
  • Panggang selama 30-35 menit
  • Setelah 30-35 menit, turunkan suhu oven menjadi 140 C. Panggang selama 35-40 menit
  • Setelah 35-40 menit, matikan oven dan buka sedikit pintu oven selama 10 menit untuk menghindari cake berkerut
  • Dinginkan kue hingga suhu ruang sebelum menyajikan’
