Taiwanese Noodle Soup “Mie Kuah Sapi ala Taiwan”

Ingredients:

The soup:

  • 1 onion (cut onto chunks)
  • 10 garlics (bash and chop)
  • 1 thumb of ginger (slice thin)
  • 3 green onions (chop)
  • 3 shallots (slice thin)
  • 6 chives (cut long)
  • 3 carrots (peel and cut chunks)
  • 2 Roma tomatoes (cut the edge and cut chunks)
  • 2 beef shanks / beef muscles (cut halves each)
  • 3 tablespoons of oil
  • 3 tablespoons of oil (again)
  • 2 liters of water

Soup spices and taste:

  • 1/4 cups of fried shallots
  • 1 tablespoon of fried garlic
  • 1 teaspoon of Chinese 5 spices powder
  • 1 tablespoon of paprika powder
  • 2 bay leaves
  • 1 teaspoon of pepper corn
  • 1 tablespoon of (brown) sugar/ regular sugar
  • 1 teaspoon of salt
  • 1 tablespoon of dark soy sauce
  • 1/4 cups of soy sauce
  • 1/4 cups of soy bean paste
  • 2 tablespoons of cooking wine
  • 1 tablespoon of fish sauce
  • 1 tablespoon of roasted sesame seeds oil

Condiments:

  • 1 cluster of pickled mustard green (chopped)
  • 2 garlics (slice thin)
  • Some green/ red chili peppers (cut small)
  • 1 green onions (chopped)
  • 1 tablespoon of oil
  • 2 tablespoons sugar

Serving:

  • fresh egg noodles
  • 1 tablespoon of soy sauce
  • 1 teaspoon of roasted sesame seeds oil
  • some chopped green onion
  • some cilantro

STEPS:

  • Make the soup: Heat pan on high and pour in 3 tbs of oil. Put in beef shanks and cook brown for 5 minutes on each side. Set aside to cool a bit.
  • Heat a pan on medium and pour in 3 tbs of oil. Put in garlic, green onions, onions, ginger, shallots, and chives. Stir fry until fragrant. Then, set aside.
  • Boil 2 liters of water and put in beef shanks.
  • Put in carrots, tomatoes, and all of soup spices and taste ingredients. Bring to boil and then simmer for 2 hours on low heat.
  • Make the condiment: Heat pan and put in oil, stir fry garlic, chili pepper, and green onion until fragrant. Put in pickled mustard greens and cook for couple minutes. Put in sugar and stir fry for another couple minutes. Set aside.
  • After 2 hours, take out meat from soup. Set aside to cool a bit. After cooled, slice onto 1/2 inches thickness. Put the sliced meat back into the soup to keep the moisture.
  • Boil the egg noodles and drain well.
  • Serving: Put soy sauce and roasted sesame seeds oil in a bowl and place in the noodle and meat. Pour in the soup and top with mustard green condiment, green onions, and some cilantro.

RESEP MIE KUAH SAPI ALA TAIWAN:

Bahan:

Sup:

  • 1 bawang bombay (potong kotak)
  • 10 bawang putih (geprek dan cincang)
  • 1 jempol jahe (iris tipis)
  • 3 daun bawang hijau (cincang)
  • 3 bawang merah (iris tipis)
  • 6 kucai (potong panjang)
  • 3 wortel (kupas dan potong panjang)
  • 2 tomat Roma (buang bagian ujungnya dan potong menjadi 2)
  • 3 sendok makan minyak
  • 3 sendok makan minyak (lagi)
  • 2 liter air

Bumbu Untuk Sup:

  • 2 sendok makan bawang merah goreng
  • 1 sendok makan bawang putih goreng
  • 1 sendok teh bubuk Ngohiong
  • 1 sendok makan bubuk paprika
  • 2 daun salam
  • 1 sendok teh biji merica utuh
  • 1 sendok makan gula pasir
  • 1 sendok teh garam
  • 1 sendok makan kecap asin hitam
  • 4 sendok makan kecap asin biasa
  • 4 sendok makan tauco
  • 2 sendok makan arak masak
  • 1 sendok makan kecap ikan
  • 1 sendok makan minyak wijen

Pelengkap:

  • 1 kuntum sayur asin besar (cincang)
  • 2 bawang putih (iris tipis)
  • Beberapa buah cabe rawit merah/ hijau (potong kecil)
  • 1 daun bawang hijau (cincang)
  • 1 sendok makan minyak
  • 2 sendok makan gula pasir

Untuk Penyajian:

  • Mie telur segar
  • 1 sendok makan kecap asin
  • 1 sendok teh minyak wijen
  • daun bawang hijau
  • daun ketumbar

LANGKAH:

  • Membuat Sup : Panaskan wajan dengan api besar dan tuang 3 sendok makan minyak goreng. Masukkan daging dan masak masing-masing sisi nya selama 5 menit. Tunggu selama 5 menit sebelum membalik daging. Awasi daging jangan sampai gosong.
  • Panaskan wajan dengan api sedang dan tuang 3 sendok makan minyak. Masukkan bawang putih, daun bawang hijau, bawang bombay, jahe, bawang merah dan kucai. Tumis hingga wangi. Kemudian, sisihkan.
  • Rebus 2 liter air dan masukkan daging.
  • Masukkan wortel, tomat, dan semua bahan Bumbu untuk sup. Didihkan dan kemudian kecilkan api rebus perlahan dengan api kecil saja selama 2 jam.
  • Membuat pelengkap: Panaskan wajan dan masukkan minyak, tumis bawang putih, cabe, daun bawang hijau hingga wangi. Masukkan sayur asin dan gula pasir. Tumis selama beberapa menit. Sisihkan.
  • Setelah 2 jam, keluarkan daging dari dalam sup. Sisihkan dan biarkan mendingin sejenak. Setelah mendingin, iris daging dengan ketebalan 1 cm masing-masingnya. Lalu masukkan irisan daging kedalam sup kembali agar daging tetap lembab.
  • Rebus mie telur dan tiriskan sempurna.
  • Penyajian: Tuang kecap asin dan minyak wijen dalam mangkuk dan masukkan mie telur dan irisan daging. Tuangi dengan sup panas dan lengkapi dengan sayur asin pedas, potongan daun bawang hijau, dan daun ketumbar.
