Aromatic Korean Black Bean Sauce Noodle “Jjajangmyeon”

Unique taste and appearance that stole many hearts of Korean foodies, here comes Jjajangmyeon. It is savory and super delicious, you will love it. Here is my recipe for it.

Ingredients:

  • 4 medium potatoes (peel and cut chunks)
  • 2 zucchini (peel and cut chunks)
  • 1 more zucchini (slice to take some skin and little meat for garnish, cut onto matches)
  • 1 onion (cut chunks)
  • 4 garlic (bash and chop)
  • 150 grams of pork belly (cut chunks around 1/2 inch width)
  • 1 teaspoon of cooking wine
  • 1 heaping tablespoon of Korean Jjajang paste
  • 1 tablespoon of sugar
  • 2 cups (500 ml) of water
  • 4 tablespoons water + 2 tablespoons of potato/corn/tapioca starch
  • 1 tablespoon of roasted sesame seed oil
  • Fresh egg noodles 2 packages
  • hard boiled eggs
  • roasted sesame seeds

  • Pan grill pork belly on high heat. After couple minutes put in garlic, cooking wine, onions, potatoes and zucchini. Mix well until fragrant.
  • Put in Korean Jjajang paste. This sauce is very salty, you do not have to put more salt. Mix well until paste smells good.
  • Add sugar and water. Close the lid of the pan and cook on medium for 10 minutes.
  • Pour in potato/corn/tapioca starch little by little while mixing the sauce. Mix until sauce is thickened.
  • Turn off the stove and pour in roasted sesame seed oil. Mix well.
  • Boil egg noodles following instructions on packaging and take it out the hot water after cooked.
  • Run the noodles on cold water for couple seconds. Drain completely.
  • Serve the noodle topped with sauce, hard boiled egg, sliced zucchini, and sprinkle of roasted sesame seeds.

RESEP MIE KOREA JJAJANGMYEON :

Bahan:

  • 4 kentang ukuran medium (kupas dan potong kotak)
  • 2 zucchini (kupas dan potong kotak)
  • 1 lagi zucchini (iris sedikit daging beserta kulitnya, iris memanjang seperti korek api, ini untuk pelengkap mie nanti)
  • 1 bawang bombay (kupas dan potong kotak)
  • 4 bawang putih (geprek dan cincang)
  • 150 gram samcam (potong kotak dengan lebar kisaran 1 cm)
  • 1 sendok makan arak masak
  • 1 sendok makan munjung pasta Jjajang Korea
  • 1 sendok makan gula pasir
  • 500 ml air
  • 4 sendok makan air + 2 sendok makan tepung kentang/ maizena/ tapioka
  • 1 sendok makan minyak wijen
  • Mie telur segar
  • Telur rebus
  • Biji wijen panggang

LANGKAH-LANGKAH:

  • Tumis samcam tanpa minyak goreng pada panci dengan api besar. Setelah beberapa menit masukkan bawang putih, arak masak, bawang bombay, kentang, dan zucchini potong. Aduk rata hingga wangi.
  • Masukkan pasta Jjajang Korea dan aduk rata lagi hingga wangi kacang hitam Jjajang menyeruak. Tidak perlu menambahkan garam karena pasta Jjajang sudah sangat asin. Apabila ingin menambah asin, boleh ditambah garam sesuai selera.
  • Masukkan gula pasir dan tuangkan air. Tutup panci dan rebus selama 10 menit dengan api medium saja.
  • Setelah 10 menit, tuangkan sedikit demi sedikit air campuran dengan tepung kentang/ maizena/ tapioka. Aduk rata hingga mengental sesuai kekentalan yang diinginkan. Sebaiknya saus dibuat kental supaya menyatu bagus ketika dituang diatas mie.
  • Matikan api dan tuangkan minyak wijen, aduk rata.
  • Rebus mie telur sesuai petunjuk kemasan dan tiriskan, siram dengan air matang dingin selama beberapa detik untuk menghentikan proses masak dan supaya mie tidak menggumpal.
  • Sajikan mie dengan siraman saus, telur rebus, irisan zucchini dan taburan biji wijen panggang.
