Japanese Chicken Karaage (Ayam Goreng ala Jepang)

Today we are going to make Japanese Chicken Karaage, famous well sought Fried Chicken you can find almost everywhere around Japan. Karaage has its own speciality compared to other fried chicken. Check out the recipe below.

  • 1 lbs of boneless and skinless chicken thigh
  • 1 thumb of ginger
  • 4 garlics
  • 1 tablespoon of soy sauce
  • 1 egg
  • 1 teaspoon of Japanese Sake/ or cooking wine
  • 1 teaspoon of roasted sesame seed oil
  • 1 teaspoon of salt
  • pepper
  • 5 tablespoons of potato/ corn starch
  • Oil for frying
  • Shredded cabbage
  • Cherry tomatoes
  • Trim the fat from the chicken.
  • Prepare 3 forks and bring the forks together as one.
  • Pierce chicken evenly using forks.
  • Cut chicken onto chunks, do not cut the chicken too small. 1,5 x 1,5 inches will do.
  • Grate/ mince garlic and ginger until smooth.
  • Mix together chicken, grated ginger and garlic, soy sauce, Sake, egg salt and pepper.
  • Put in potato/corn starch and mix well until all part of chicken is coated.
  • Marinade chicken for 1 hour in closed bowl/ container in refrigerator.
  • Prepare lot of oil for frying on Medium heat.
  • Fry the chicken until half cooked and faintly golden, do not over crowd when frying for better result.
  • Take chicken out of pan and set aside on wire rack.
  • Turn the heat on High.
  • Fry the chicken again until cooked completely and golden brown.
  • After cooked, take chicken out of pan and set aside on wire rack.
  • Serve warm with shredded cabbage and tomatoes.

RESEP AYAM GORENG JEPANG “”KARAAGE”

  • 450 gram paha ayam tanpa kulit dan tulang
  • 1 jempol jahe
  • 4 bawang putih
  • 1 sendok makan kecap asin
  • 1 sendok teh minyak wijen
  • 1 sendok teh Sake (arak Jepang)/ arak masak
  • 1 telur
  • 1/4 sendok teh garam
  • merica sesuai selera
  • 5 sendok makan tepung kentang/ tepung maizena
  • minyak untuk menggoreng
  • kubis yang telah diiris tipis tipis
  • tomat cherry/ tomat kecil-kecil.
  1. Buang bagian lemak dari ayam dengan menggunakan pisau.
  2. Siapkan 3 garpu dan satukan garpu dalam satu genggaman.
  3. Tusuk-tusuk daging secara merata.
  4. Potong-potong daging menjadi kotak-kotak. Jangan memotong daging terlalu kecil, potong kisaran 4 x 4 cm.
  5. Haluskan jahe dan bawang putih hingga lembut betul.
  6. Campur bersama ayam, kecap asin, Sake/ arak, minyak wijen, garam dan merica, parutan bawang putih dan jahe, serta telur. Aduk rata.
  7. Masukkan tepung kentang/ tepung maizena dan aduk rata lagi, pastikan semua bagian ayam terlumuri tepung dan telur.
  8. Simpan ayam dalam wadah tertutup rapat dalam lemari es selama 1 jam.
  9. Panaskan wajan dengan banyak minyak untuk menggoreng. Panaskan dengan api Medium.
  10. Goreng ayam hingga sedikit keemasan dan setengah matang saja. Segera tiriskan.
  11. Panaskan minyak yang sama dengan api Besar, jika sudah panas, masukkan ayam dan goreng sekali lagi hingga matang dan warna nya keemasan.
  12. Tiriskan ayam goreng dan sajikan segera dengan irisan kubis dan tomat cherry/ tomat kecil.
