Today I am making homemade fluffy cotton doughnuts. They are simply very fluffy and airy too that you’ll feel you’re enjoying cloud itself. Very soft even still on the second day. No bread improver and emulsifier needed for this recipe. Try it soon.

TIPS HANYA TERSEDIA DI VIDEO
- 4 cups (500 grams) of bread flour
- 200 ml of cold milk
- 1/2 cup of sugar (100 grams)
- pinch of salt
- 1 whole egg
- 2 egg yolk
- 1 tablespoon (10 grams) of active dry yeast
- 1/2 cup (113 grams) of melted butter (room temperature)
- oil for frying
- powdered sugar for topping
- bread flour for dusting
- parchment paper
- Mix bread flour, sugar, salt, milk, eggs, and melted butter.


2. Dust a working table with bread flour and place the mix on it.
3. Start to knead the dough making movement front and back and sometimes folding the dough for 15 minutes. This will help to build the gluten. If you use Standing Mixer, knead the dough for 10-12 minutes only and skip step number 4.

4. After 15 minutes dough will look smoother and bouncier, continue working on it for another 15 minutes.

5. Place the dough in a big bowl and cover it tight.
6. Leave it somewhere warm for 1 hour or until it is double in size.
7. Cut parchment paper 4 x4 inch in size. About 20 will do according to the size of the doughnut. You may need more paper if you cut the dough smaller.

8. After 1 hour, flatten the dough and knead for another 3 minutes to release trapped air inside it.

9. Roll the dough flat about 1/2 inch thick/ 1 cm thick and start cut the dough using cookie cutter or doughnut cutter or any possible round cutting stuff you have.

10. Don’t forget to cut the center hole too. You can use bootle cap or icing nozzle for it.

11. Place the cut dough on parchment paper and place them one by one in a deep dish that you can close tight without flatting the dough.
12. Leave the cut dough on warm place for another 20 minutes or until they are double in size.
13. After 15 minutes waiting, heat lot of frying oil in a pan on low. Do not use high heat since we want the doughnuts to be cooked evenly well.
14. Fry the upper surface of the doughnut first rather than the bottom side, fry them for 2 minutes or until golden brown and FLIP them ONCE and continue frying for also 2 minutes or until golden brown.


15. Place the fried doughnuts on wire rack and let cool completely.
16. Simply dust the doughnuts with powdered sugar and ENJOY.

RESEP DONAT KAPAS:
- 4 cup (500 gram) Tepung Terigu Protein Tinggi (untuk membuat roti)
- 200 ml susu cair dingin
- 1/2 cup (100 gram) gula pasir
- sejumput garam
- 1 sendok makan (10 gram) ragi instan
- 1 telur
- 2 kuning telur
- 1/2 cup (113 gram) butter/ mentega yang sudah dilelehkan (dinginkan hingga suhu ruang sebelum digunakan)
- minyak untuk menggoreng
- gula serbuk/bubuk untuk melapisi donat
- tepung protein tinggi untuk taburan
- kertas minyak/ kertas kue untuk alas donat
LANGKAH:
- Campur tepung, gula, garam, susu cair, telur, dan mentega leleh.
- Aduk rata dan siapkan meja kerja untuk menguleni adonan.
- Uleni adonan dengan gerakan maju dan mundur sambil sesekali melipat adonan selama 15 menit. Ini akan membantu membantu gluten pada adonan. Apabila menggunakan Standing Mixer, uleni adonan hanya selama 10-12 menit saja dan lewati Langkah nomor 4, langsung ke Langkah nomor 5.
- Setelah 15 menit adonan akan tampak lebih lembut dan lebih empuk, uleni lagi selama 15 menit.
- Simpan adonan dalam mangkuk besar dan tutup rapat.
- Biarkan adonan dalam ruangan yang hangat selama 1 jam atau hingga ukurannya membesar dua kali lipat.
- Potong-potong kertas minyak/ kertas kue sebesar 10 x 10 cm sebanyak kurang lebih 20 lembar tergantung ukuran donat.
- Setelah 1 jam, kempiskan adonan dan uleni lagi selama 3 menit untuk menghilangkan gelembung udara di dalam adonan.
- Gilas adonan hingga setebal 1 cm dan potong bundar dengan cetakan donat/ kue. Potong juga bagian lubang tengahnya.
- Letakkan donat diatas kertas minyak/ kertas kue dan letakkan dalam wadah (toples pipih kotak) yang bisa ditutup rapat tanpa menyentuh bagian atas donat yang mengembang dan membuat donat kempes.
- Biarkan donat mengembang sekali lagi selama 20 menit atau hingga mengembang 2 kali lipat.
- Setelah 15 menit, panaskan banyak minyak goreng bersih dalam wajan dengan api KECIL. Jangan gunakan api BESAR untuk menggoreng donat, karena bagian dalam donat susah matang apabila digoreng dengan api besar.
- Goreng bagian atas permukaan donat mentah terlebih dahulu selama 2 menit atau hingga kuning keemasan, lalu BALIK donat SEKALI SAJA. Goreng lagi selama 2 menit atau hingga kuning keemasan.
- Setelah matang, tiriskan donat dan biarkan mendingin sempurna.
- Taburi donat dengan gula bubuk/ serbuk dan sajikan.
