Braised Pork Belly “Babi Kecap”

  • 1 kilograms of fresh pork belly
  • 3 tablespoons of oil
  • 2 tablespoons of sugar
  • 2 tablespoons of rice wine vinegar
  • 2 tablespoons of dark soy sauce
  • 2 tablespoons of light soy sauce
  • 1 teaspoon of Paprika powder
  • 1 teaspoon of Chinese 5 Spice powder
  • 3 tablespoons of honey
  • 2 small chunks of ginger
  • 4 garlic
  • 2 green onions
  • salt and pepper
  • 900 ml of water
  • Cut pork belly onto chunks.
  • Boil a pot of water and boil the pork belly for 5 minutes on HIGH heat.
  • Drain the hot water and wash pork belly under running cold water.
  • Pour in 3 tablespoons of oil on a pan. When the oil is hot, put in 2 tablespoons of sugar and wait until it turns into caramel.
  • When the caramel is formed, put in pork belly. Stir well.
  • Pour in 2 tablespoons of rice wine vinegar, 2 tablespoons of dark soy sauce, 2 tablespoons of light soy sauce, 1 teaspoon of Paprika powder, salt and pepper following preference.
  • Put in 1 teaspoon of Chinese 5 Spice powder, 3 tablespoons of honey, 2 small chunks of ginger, 4 garlic, 2 green onions. Stir well.
  • Pour in 500 ml of water and close the lid of the pan, cook on HIGH heat for 10 minutes or until the water is gone.
  • Scoop out any excess oil coming from the pork.
  • Pour in 400 ml of water and shimmer the pork belly for another 40 minutes.
  • After 40 minutes, turn off the heat and serve the pork belly warm.

  • 1 kilogram daging babi bagian perut (Samcam)
  • 3 sendok makan minyak
  • 2 sendok makan gula pasir
  • 2 sendok makan arak masak
  • 2 sendok makan kecap asin hitam
  • 2 sendok makan kecap asin biasa
  • 1 sendok teh bubuk Paprika
  • 1 sendok teh bubuk Ngohiong
  • 3 sendok makan madu
  • 2 potong jahe segar
  • 4 bawang putih
  • 2 daun bawang/ bawang hijau
  • garam dan merica
  • 900 ml air
  1. Potong-potong Samcam menjadi kotak-kotak.
  2. Panaskan air dalam panci dan rebus Samcam selama 5 menit dengan api BESAR.
  3. Tiriskan air panas dan cuci Samcam dengan air dingin mengalir.
  4. Tuang 3 sendok makan minyak dalam panci. Jika panci sudah panas, masukkan 2 sendok makan gula pasir dan biarkan meleleh menjadi karamel.
  5. Jika karamel sudah terbentuk, masukkan Samcam dan aduk rata.
  6. Tuang 2 sendok makan arak masak, 2 sendok makan kecap asin hitam, 2 sendok makan kecap asin biasa, 1 sendok teh bubuk Paprika, garam dan merica sesuai selera Anda.
  7. Masukkan 1 sendok teh bubuk Ngohiong, 3 sendok makan madu, 2 potong jahe segar, 4 bawang putih, 2 daun bawang. Aduk rata.
  8. Tuang 500 ml air dan tutup panci. Didihkan Samcam dengan api BESAR selama 10 menit atau hingga air meresap dan hanya tertinggal minyak saja.
  9. Sendok minyak dari Samcam keluar dari panci. Tuang 400 ml air dan tutup lagi panci. Masak dengan api KECIL selama 40 menit.
  10. Samcam siap disajikan.
